Foodie Friday: Taco Soup


One of my favorite soups to make in cold weather is Taco Soup. The last time I made it I used ground turkey instead of the beef, and couldn't tell any difference. It's low cal, filling, and delicious!
1 lb lean ground beef
1 large onion chopped
1 can kidney beans
1 can pinto beans
1 can corn
1 can Rotel tomatoes
1 can diced tomatoes
1 package Taco Seasoning
1 package Ranch dressing mix

Brown ground beef and onion and drain. Add rest of ingredients and simmer for 1-2 hours.
I sprinkle 2% cheese on top.

  2. Diane, this soup looks SO good, and I'm glad that it's lo-cal. I love soup, too! Got to try this one. :-)

    I'm going to try to leave in the morning. I'm hoping we don't get another thunderstorm, but I have to go whether it storms or not. It cleared up today, but I didn't get things loaded and need Mr. Magpie's help to do it.

    I didn't have a recipe for Taco Soup, and I LOVE that this is low-cal. I can't wait to cook this.

    I can't wait to try this. We like any sort of variation on tacos and I love that you can use turkey, it probably absorbs a lot of the flavors of the broth.

    I make something similar, but I've never tried it with the Ranch seasoning. Looks like I might have to give it a go this weekend...it's supposed to be cold and rainy!

  14. How did I miss this post yesterday? I've read about a lot of people liking this soup. I've never tried it! It does sound yummy though! Maybe one day I will actually have to make this.

  21. I'm getting more "into" ground turkey instead of ground beef. I've made taco soup before, but not with turkey; I'll give it a try. All of these food recipes are giving me a huge appetite!
