Holiday Green Beans: WFMW

One of my favorite things to do this time of the year it to thumb through my Christmas magazines for ideas while sitting near the fire (okay the gas logs. LOL)
I usually keep my copies of Southern Living and Mississippi magazine for a few years. While looking through them, I usually find a recipe or two to try, and get some great decorating ideas.

I know all of you have seen the commercial from years past where the guests all show up at their destination all bringing the green bean casserole! We have had it with our holiday meals lots of times in the past.

Here is a different way to serve green beans that our family really enjoyed that I tried last year. It is from the Dec. 2007 Mississippi Magazine.
I don't have pictures because I wasn't blogging last year when I made it.

Simply Great Green Beans


6 (14 .5 oz.) cans whole green beans

1/2 stick butter

1/2 cup brown sugar, packed

1/2 cup Hormel real crumbled bacon

Preheat oven to 325 degrees. Drain green beans, and pour into a 9 by 13 inch baking dish. Set aside. Melt butter, and stir in brown sugar. Pour butter and sugar mixture over green beans. Sprinkle with crumbled bacon. Cover with foil, and bake for 30 minutes.
Yield: 10-12 servings.

I usually mix them up the night before and refrigerate. They are so easy to make and very tasty!

Crowd Pleasing Dip

One of my favorite cookbooks is Prime Meridian. This cookbook is full of recipes from local residents all of which have been taste tested. All of the recipes I've tried from the cookbook have been great! In addition, the illustrations are prints of art work by Meridian artist Greg Cartmell and feature area attractions such as our Grand Opera House.


For Cooper's birthday party, I made the Hot Swiss and Bacon Dip from the cookbook. The casserole caddy was one of my 'freebies' from my Southern Living at Home party.


Here is the recipe:


1 8 ounce package cream cheese, softened
1/2 cup mayonnaise
1 cup shredded Swiss Cheese
2 tablespoons chopped onion
10 slices bacon, cooked and crumbled, divided
Round buttery crackers
Preheat oven to 350. Mix cream cheese and mayonnaise. Add Swiss cheese, onion and bacon, reserving 3 tablespoons of bacon. Place in a greased 1 1/2 quart baking dish. Crumble 15 to 20 crackers. Sprinkle cracker crumbs and remaining bacon on top. Bake 15 to 20 minutes. Serve with remaining crackers.
I doubled the recipe, and used a 9 by 12 baking dish.

Potato Casserole: A Family Favorite

Here's a recipe for one of our family favorites.



Potato Casserole

Ingredients:

Frozen Hash Brown Potatoes or Frozen O’Brien potatoes

(thaw just long enough to break apart)

1 carton sour cream

1 can chicken of celery soup

2 cups sharp cheese-shredded or grated

Directions:

Mix all above ingredients together.

Topping:

Crushed Ritz Crackers (about one stack) or

Corn Flakes

1 stick of butter cut up

Bake for 2 hours at 350

Can be made up ahead and refrigerated. This also freezes well.


I usually make this at Thanksgiving when we go to my Aunt Gloria's and also at Christmas....and often for special birthday dinners through the year. It goes well with steak in place of baked potatoes.
