Foodie Friday: Taco Soup

One of my favorite soups to make in cold weather is Taco Soup. The last time I made it I used ground turkey instead of the beef, and couldn't tell any difference. It's low cal, filling, and delicious!
1 lb lean ground beef
1 large onion chopped
1 can kidney beans
1 can pinto beans
1 can corn
1 can Rotel tomatoes
1 can diced tomatoes
1 package Taco Seasoning
1 package Ranch dressing mix

Brown ground beef and onion and drain. Add rest of ingredients and simmer for 1-2 hours.
I sprinkle 2% cheese on top.

Thanks for coming by. Please visit Designs by Gollum for more Foodie Friday posts

Diane, this soup looks SO good, and I'm glad that it's lo-cal. I love soup, too! Got to try this one. :-)

I'm going to try to leave in the morning. I'm hoping we don't get another thunderstorm, but I have to go whether it storms or not. It cleared up today, but I didn't get things loaded and need Mr. Magpie's help to do it.

Take care, and thanks again for this good-looking recipe. I'll try it soon!

Happy Foodie Friday!

I just made this today...instead of ground beef, I used shredded boiled chicken. We love it!

This soup has comfort food written all over it, the kind of soup that perfumes the whole house and says, "Come on in and sit a while."
I didn't have a recipe for Taco Soup, and I LOVE that this is low-cal. I can't wait to cook this.
Thank you so much!

I can't wait to try this. We like any sort of variation on tacos and I love that you can use turkey, it probably absorbs a lot of the flavors of the broth.

Thanks so much. Happy Foodie Friday

Hi Diane!
I make something similar, but I've never tried it with the Ranch seasoning. Looks like I might have to give it a go this's supposed to be cold and rainy!

This looks delicious and my husband bought a can of pinto beans by mistake a few weeks ago and I wasn't sure how to use it. Now I have a recipe. Thanks and Happy Foodie Friday.

I'm getting more "into" ground turkey instead of ground beef. I've made taco soup before, but not with turkey; I'll give it a try. All of these food recipes are giving me a huge appetite!
